Ingredients & Prep

   4 Chicken leg thigh joints
   50 ml  Red wine vinegar
   3 tbsp  Lemon juice
   2 tbsp  Olive oil
   6 Red chillies large mild chopped
   1 tbsp  Runny honey
   6 Garlic cloves finely grated
   1 tbsp  Smoked paprika
   1 tsp  Dried oregano
   1 tsp  Dried thyme
   1 tsp  Chilli powder or flakes
   1/2 tsp  Salt


  Step 1
Pre-heat oven to 120°C fan.
  Step 2
Place all the marinade ingredients into a food processor or blitz with a stick/hand blender to a smooth paste.
  Step 3
Slash 3 cuts with a sharp knife 1 cm deep in flesh side of the joint, place joints in a bowl & pour over marinade & massage into the cuts & coat, cover bowl with cling film, place in the fridge for at least 5 hours or over night which is best.
  Step 4
Place marinated chicken joints in a baking tray or dish covered with tin foil lid, & bake for 1 hour, keep marinade.
  Step 5
Place chicken joints on the BBQ & cook until nicely coloured basting with the marinade a couple of times.

Suggestion & Tips

Best to do in the oven first to make sure chicken is cooked.
