Ingredients & Prep
800 g
Octopus tentacles washed
to cover
Water
2 Onion roughly chopped
2 Celery stick chopped
2 Carrot peeled & chopped
1 tbsp
Black peppercorns
2 Bay leaves
Marinade
200 ml
Olive oil
100 ml
White wine vinegar
2 tbsp
lemon juice
2 Garlic cloves finely grated
1 tbsp
Dried oregano
1 tsp
Paprika sweet
1/2 tsp
Freshly ground black pepper
1/2 tsp
Salt
Method
Step 1
Place octopus into a lidded saucepan with onion, celery, carrot, bay leaves & peppercorns, cover with water, place pan on a low heat & cook for 1 & half hours until tender.
Step 2
In a good sized bowl add all the marinade ingredients & whisk together, drain the octopus into a colander & add hot octopus to the marinade, then mix & coat the tentacles well with your hands, then set aside for 2 hours before cooking, re-coat every 30 mins.
Step 3
Place tentacles on the BBQ to finish cooking, cook to crisp up the edges for a 5 mins turning at lest twice.

Traditionally eaten with boiled potatoes, BBQ veg & salad.
