Ingredients & Prep

   4 sweet potatoes large cut into 8 mm discs
  Marinade & Baste
   3 tbsp  fresh ginger finely grated
   3 tbsp  soy sauce dark
   3 tbsp  vegetable oil
   1 tbsp  lime juice
   1 garlic clove finely grated
   1 tsp  toasted sesame oil
   50 g  roast peanuts chopped
   1 green chilli large mild cut into thin strips
   4 spring onions finely chopped


  Step 1
Add & whisk marinade in a bowl or blitz with a blender, add sweet potato wedges & coat & set aside for an hour.
  Step 2
Place wedges on the barbecue with tongs straight from the bowl, retain marinade, cook 5 mins per side then either pick up with tong & dip in the marinade or brush on, repeat until sweet potato is soft in the middle & crispy on the outside.
  Step 3
When cooked place in a serving bowl & garnish.

Suggestion & Tips

Nice with rice & a Asian salad.
