Ingredients & Prep

   6 Chicken thighs
   6 Chicken drumsticks
   3 tsp  fennel seeds crushed
   2 tsp  smoked paprika
   1 tsp  chilli powder
   2 tsp  garlic powder/granules
   1 tsp  cumin seeds crushed
   1 tsp  sea salt
   1/2 tsp  freshly ground black pepper
  Coating Sauce
   120 ml  apple juice unsweetened
   100 g  brown sugar
   100 g  tomato ketchup
   50 ml  bourbon whisky
   50 ml  orange juice
   2 tbsp  Worcestershire sauce
   2 tbsp  balsamic vinegar
   2 tsp  English mustard
   2 tsp  chipotle chilli paste
   1 tsp  sea salt


  Step 1
Cut a couple of slashes in the chicken with a sharp knife.
  Step 2
In a bowl large enough to hold all the chicken mix all the rub ingredients together, then add chicken pieces & rub in the rub into the chicken pieces & leave for an hour.
  Step 3
Meanwhile make the marinade by putting all marinade ingredients into a saucepan mix & simmer for 15 min stirring often.
  Step 4
Pre-heat oven to 150'c, place chicken pieces on a baking tray & cook for 20 mins, remove chicken & dip & coat each piece of chicken (use tongs) in the coating sauce, (retain the sauce) then cook again in the oven at the same temperature for a further 20 mins.
  Step 5
Re-dip/coat the chicken pieces & barbecue for a coupe of mins a side or place in a oven at 200'c for 10 mins, to crisp the edges.

Suggestion & Tips

Pre-cooking in the oven first insures its cooked through. You can add a couple of drops of smoke liquid in the coating sauce if you don't barbecue.
