Ingredients & Prep

   1000 ml  Water
   800 ml  Frozen peas
   8 Spring onions chopped white from green
   200 g  Potato peeled & chopped
   1 1/2 Veg stock cube or gel pot
   15 g  Fresh mint leaves chopped
   1/2 tsp  Ground white pepper
   2 tbsp  Olive oil


  Step 1
In a saucepan add oil, potato & white part of the spring onions & cook for 3 mins over a med heat, then add water, pepper & stock cubes, then simmer for 10 mins or until the potato is soft.
  Step 2
When potato is cooked add the peas & simmer for 5 mins then add green spring onion & mint, cook for a further 2 mins.
  Step 3
Next blend the soup with a stick/hand blender or use a liquidiser, blitz to smooth & serve.

Suggestion & Tips

You can use onion instead of spring. Other green veg like broccoli would work well. Add a few fresh mint leaves as decoration.
