Ingredients & Prep

   1 1/2 Fresh Lemon Juice
   1 tsp  Dried Oregano
   2 Crushed Fresh Garlic glove OR 2 tablespoons of Fodmap friendly Garlic Olive Oil
   1 tbsp  Maple Syrup (Fodmap Friendly, alternatively use honey or brown sugar)
   1/2 tsp  Crushed Chilli Flakes
   600 g  Diced Chicken Breast (Or Pork is an option)
   400 g  Roasted Long Green Beans To Serve
   600 g  Potatoes
   to cover  Ground Sea Salt

Method

  Step 1
Set a fan oven to 190c, and non fan to 210c (non fan hasn't been tested)
  Step 2
Mix the sauce ingredients in a large enough bowl (lemon juice, oregano, garlic olive oil or crushed garlic gloves, maple syrup, and chilli flakes), making sure to break up the chilli flakes into as small as pieces as possible.

Cut the potatoes into wedges and boil for 15 minutes to soften before baking.
  Step 3
Add the chicken to a baking tray, covering both sides of the chicken completely with the prepared cooking sauce. Then cover the chicken in a tray cover or baking foil.
  Step 4
Add the potatoes in wedge shape to a separate baking tray. Cover with olive oil, and liberally season with sea salt, to create sea salt potatoes to serve.
  Step 5
Add both the chicken baking tray and potatoes baking tray to the oven for 35 minutes, stir/move about each tray half way through cooking time. (Both the chicken and potatoes can both be adapted to an air fryer).

  Step 6
10 minutes before serving, remove the top or foil off the chicken tray to evaporate any excess water from the chicken. If there is no excess water do not remove the top or foil to keep the chicken tender. The aim is to remove excess water while avoiding dry textured chicken breast.
  Step 7
Boil or steam the beans before serving.
  Step 8
Serve the chicken dish when cooked but moist, with the sea salt potatoes and green beans as sides.

Suggestion & Tips

Depending on your fodmap needs, and garlic preferences, more or less garlic olive oil and garlic gloves can be added to the recipe. If you don`t like the taste of maple syrup or prefer another sweet taste, you can replace it with honey or brown sugar syrup.
