Ingredients & Prep

   600 g  Raw large prawns de-veined & shelled less tail
  Sauce
   6 Red chilli large mild
   1 Red chilli hot chopped (optional)
   2 Garlic clove chopped
   1 tbsp  Smoked paprika
   2 tbsp  Cider vinegar
   1/2 tsp  Salt
   100 ml  Olive oil

Method

  Step 1
Pre-heat oven to 200°C fan.
  Step 2
Cut large chillies in half & remove seed & stalk, brush with a little extra olive oil, place on a baking sheet & roast for 8 to 10 mins or until lightly browned, then remove to cool.
  Step 3
Place roasted chillies, hot chilli if used, garlic, paprika, vinegar, salt & olive oil in a food processor & blitz to a loose paste.
  Step 4
In a bowl place the prawns & sauce, mix & set aside in the fridge for 2 hours to marinate.
  Step 5
Heat a frying pan or wok on a med heat, then add prawns with the sauce & fry stirring for about 4 mins until prawns are cooked, then serve.

Suggestion & Tips

Add a wedge of Lemon or lime on the side if you like. Chicken works well.
