Ingredients & Prep

   1500 g  Fresh Mussels cleaned
   6 Bacon rashers chopped
   2 Banana shallots finely chopped
   200 ml  White wine
   100 ml  Double cream
   1 tbsp  Fresh thyme leaves only
   2 Garlic clove grated
   1 tbsp  Butter
   1 tbsp  Olive oil
   1/2 tsp  Freshly ground black pepper

Method

  Step 1
Place a good sized lidded saucepan over a med heat, then add oil, butter & bacon, then fry until bacon starts to go crispy, then add shallots & garlic & fry off until soft, then add in the mussels, wine, thyme & pepper, place the lid on & cook for 4 to 5 minutes.
  Step 2
When mussels are open take off the lid add cream & stir in with a big spoon take off the heat & serve.

Suggestion & Tips

Can be a main dish, if so eat with some nice French crusty bread.
