Ingredients & Prep

   300 g  Black beans rinsed & drained weight
   300 g  Sweet corn tinned drained weight
   4 Corn tortillas large cut into thin strips
   100 g  Jalapeno chillies in brine chopped (keep brine)
   4 Vine tomatoes med chopped
   2 Avocado sliced
   1 Red onion finely sliced
   20 g  Fresh coriander chopped
   200 g  Lettuce of choice
   4 tbsp  Olive oil
   200 g  Sour cream
   2 tbsp  Jalapeno chillies in brine chopped
   2 tbsp  Fresh chives fine chopped
   1 Garlic clove finely grated
   1/4 tsp  Salt
   1/4 tsp  Freshly ground black pepper
   1 Lime cut into wedges


  Step 1
Pre-heat grill to 180°C.
  Step 2
Roll up tortillas then slice with a knife in 5 mm slices, then cut in half to form batons, place in a bowl add olive oil & coat, then spread out on a baking sheet & grill for 3 to 4 mins to golden brown, set aside to cool.
  Step 3
Place all dressing ingredients into a good sized bowl & mix together.
  Step 4
Place beans, onion, Jalapeno, sweet corn, tomato, baked tortillas strips, avocado slices, coriander & lettuce on top of the dressing & fold all together, place on a serving platter & garnish with lime wedges.

Suggestion & Tips

You could add cooked chicken in this recipe.
