Ingredients & Prep

   400 g  Raw Mussels shelled & washed
   150 g  Raw Prawns de-shelled
   150 g  Raw squid chopped
   150 g  Raw octopus legs chopped
   4 Garlic cloves finely chopped
   16 Cherry tomatoes cut in half
   1/2 tsp  Chilli flakes
   1/2 tsp  Freshly ground black pepper
   1/4 tsp  Salt
   3 tbsp  Olive oil
  Salad
   200 g  Baby leaf salad
   150 g  Rocket
   2 Carrot course grated
   20 g  Fresh flat-leaf parsley chopped
   1 tsp  Fresh thyme leaves
  Dressing
   1 Lemon juiced
   4 tbsp  Olive oil
   1 tbsp  Cider vinegar
   1 tsp  Dijon mustard
   1 tsp  Runny honey
   1/2 tsp  Freshly ground black pepper
   1/4 tsp  Salt
  Garnish
   sprinkle  Parmesan cheese shavings

Method

  Step 1
Make the dressing by either putting all the dressing ingredients into a clean jam jar & shaking it, or whisking together in a bowl.
  Step 2
In a bowl add grated carrot & thyme, then add some of the dressing to just coat, mix together then set a side.
  Step 3
Place baby leaves, rocket & parsley in a bowl, toss together & set aside.
  Step 4
Heat a frying pan on a med heat, then add oil, octopus, mussels & garlic, chilli flakes salt & black pepper & stir fry for 2 mins, then add squid & prawns, stir fry for 3 to 4 mins until all is cooked & mussels have opened, remove with a slotted spoon into a bowl, next place cherry tomatoes cut side down & fry until coloured then remove into the fried seafood bowl.
  Step 5
Dress the salad leaves.
  Step 6
On the serving plate, place a portion of the grated carrot mixture & spread out, then a portion on the dressed salad leaves, next add tomatoes halves & the seafood on top.
  Step 7
Next use a potato peeler & shave & couple of slices on top of each portion.

Suggestion & Tips

Very nice with fries.
