Ingredients & Prep

   150 g  Pack falafel dry mix
   170 tbsp  Water
   20 g  Fresh parsley, finely chopped
   150 g  Mozzarella hard cows grated
  Sauce
   400 tbsp  Tomato passata
   150 ml  Water
   1 Vegetable stock cube or gel pot
   1 Onion finely chopped
   1 Red bell/sweet pepper chopped
   1 tbsp  Harissa paste
   2 Garlic clove finely chopped
   50 g  Dried apricots chopped or raisins (optional)
   20 g  Fresh basil chopped
   2 tbsp  Olive oil
   1/2 tsp  Black pepper freshly ground
  Garnish
   sprinkle  Fresh parsley, finely chopped

Method

  Step 1
Mix falafel in a bowl with water & chopped parsley, cover with cling film & set aside. Pre heat oven to 200'c.
  Step 2
Heat a ovenproof casserole or pot on the hob over a med heat, fry off onion until light brown in the oil, add garlic & red pepper, fry off for 1 min stirring, then add Harissa paste, stir in then add tomato passata, simmer for 10 mins stirring occasionally, add water, stock cube, dried apricots & basil stir in & turn off the heat.
  Step 3
Form falafel paste into walnut size balls & drop into the tomato sauce, sprinkle over cheese, bake in the oven for 10 to 15 mins or until the cheese is bubbling.

Suggestion & Tips

Nice with fried potatoes in olive oil & salad.
