Ingredients & Prep

   8 Taco shells
   300 g  Cooked brown lentils
   150 Re-fried black beans
   1 Onion finely chopped
   60 ml  Water
   1 Veg stock cube or gel pot
   2 tbsp  Jalapeños chillies from a jar chopped
   2 tsp  Smoked paprika
   2 tsp  Chipotle paste
   1/2 tsp  Ground cumin
   1/2 tsp  Dried oregano
   1/2 tsp  Freshly ground Black pepper
   2 tbsp  Olive oil
   sprinkle  Fresh coriander


  Step 1

Heat a frying pan on a med heat, add oil & onion, fry until light brown, then add garlic & fry & stir for another minute, then add water, stock cube, chipotle paste cumin, paprika, oregano, black pepper, chopped jalapenos, & re-fried beans stir & heat together, then add cooked lentils, stir until all hot, take off the heat.
  Step 2
Spoon equally into the taco shells, sprinkle on coriander, serve & eat straightaway.
