Ingredients & Prep

   8 Eggs hard boiled & shelled
   300 ml  Cider vinegar 
   150 ml  Water
   30 g  Fresh turmeric root finely grated
   30 g  Caster sugar
   2 tsp  Coriander seeds 
   2 tsp  Yellow mustard seeds 
   1 English mustard powder 
   1 tsp  Black peppercorns
   1 tsp  Salt


  Step 1
Place eggs in a sterile jar/s.
  Step 2
Place vinegar, water, turmeric, sugar, salt, mustard powder, peppercorns, mustard & coriander seeds in a saucepan then put over a med heat & bring to a simmer for 8 minutes stirring occasionally.
  Step 3
Pour hot liquid over the eggs to cover & preferably to the top, place lid on & allow to cool.
  Step 4
When cool place in the fridge & leave for a week before eating.

Suggestion & Tips

Very nice as a side with an Indian meal. You can add some chilli if you like them with a little heat.
