Ingredients & Prep
10 Sweet mini peppers cut in half through stalk
250 g
Soft Goats cheese
50 g
Parmesan cheese finely grated
1 Garlic clove finely grated
1 tbsp
Jalapeños Peppers from a jar chopped fine
1/2 tsp
Freshly ground black pepper
Method
Step 1
Pre-heat oven to 180°C fan.
Step 2
In a bowl mix goats cheese with the garlic, chopped Jalapenos & black pepper well.
Step 3
When cutting to peppers in half lengthways try to keep both side of the stalk on each half, then with a tsp fill each half with the cheese mixture, place stuffed peppers on a non-stick baking sheet, then sprinkle parmesan over the top on each one.
Step 4
Place in the oven & cook for 20 mins or until the cheese bubbles, remove & place on a serving platter, best eaten warm.
Suggestion & Tips
You can add herb into the filling.
